This is because Mac OS has to scale everything for non-"standard" resolutions, which I believe still occurs after the game renders a frame. By far the worst FPS occurs when the system resolution is lower than the in-game resolution. It is possible to get acceptable FPS with a scaled resolution as long as it is at least as high as the in-game resolution.
